Our Ingredients

Below is a long, long list of all the core ingredients and products we use in our shops' kitchens.
 
The Trade Descriptions Act requires the definition of country of origin to change depending on where the ingredients are finally cooked (or squeezed or bottled). To keep things simple, we've included an explanation of the wheres, whys and hows of the ingredients and products that we buy. 

Our food philosophy is about securing the best ingredients we can - this will of course depend on the seasons. During the summer we can grow our rocket leaves in Sussex, but in the winter they come from Italy.

Avocado picture

ALMONDS (USA): Shipped to us at room temperature, roasted in our shops throughout the day.

APPLE & BLACKCURRANT JUICE (UK): Pressed UK apples, squished blackcurrants, blended and packed for us in the UK

APPLE JUICE (UK): UK apples, pressed and packed for us in the UK

APPLES (mostly UK): Picked from UK orchards during the apple season (from Chile and New Zealand at other times of the year), delivered to us every day

ARTISAN BAGUETTE (France): Stone-baked, made from a traditional sour dough recipe, snap frozen, shipped to us and baked in our shops

AVOCADO (Europe & outside Europe): Hand-turned regularly in our special ripening room, shipped at room temperature, sliced in our kitchens every morning



Butter picture

BACON (UK): 100% Farm Assured, no phosphates, slow-cured and beech-smoked. Snap frozen for slicing, cooked in the UK until double-crispy and then delivered to us every morning. Occasionally sourced from outside the UK from Farm Assured equivalent European farms

BANANAS (Costa Rica): Harvested and brought to us by boat

BASIL (Israel): Picked fresh and air-freighted to us. This is the only ingredient we air-freight

BEEF (UK): Shipped from Southern Ireland, cooked in the UK and delivered chilled to our shops every morning

BLACK OLIVES (Morocco): Mature, un-dyed, sliced and packed then brought to us by boat

BLOOMER BREAD (UK): Made with UK flour, stuffed full of poppy seeds, sunflower seeds, linseed, oats, bran and wheat flake, delivered to us every morning

BRIE (France): Traditional creamy French Brie, sliced to our own specification and shipped to us chilled

BUTTER (France): Traditional French butter, shipped to us chilled

BUTTERNUT SQUASH (UK): Seasonally sourced outside Europe, seasoned and cooked in the UK, shipped to us chilled

CAESAR MAYO (UK): Made to our own recipe using free-range eggs in Buckinghamshire

CAKES, BARS AND BISCUITS (UK): Handmade to our own recipes, delivered to us chilled

CAPERS (Morocco): Prepared and salted then shipped to us chilled

CARROT JUICE (UK ): Sourced in the UK except when out of season. Pressed and packed in the UK, never pasteurised

CHEDDAR (Ireland): Croxton Manor Cheddar, matured in the traditional way for a minimum of 6 months, shipped to us chilled

CHERRY TOMATOES (Europe): Packed, shipped and delivered to every shop

CHICKEN (UK): 100% chicken breast from Brazil, reared in open barns. No starch, no phosphate, not reformed, snap frozen, shipped, marinated and cooked in the UK

CHILLI CASHEWS (UK): Cashews from outside Europe, coated and roasted in the UK

CHILLI TOMATO SAUCE (UK): Made for us in Scotland and delivered to us chilled

CHOCOLATE POWDER (USA): Arguably the best chocolate in the world – Ghirardelli, ground for us in San Francisco and shipped

CLEMENTINE JUICE (UK): Sweet clementines from Spain, squished and packed for us in the UK

CLEMENTINES (Spain): The sweetest clementines from sunny Spain

COFFEE (UK): Organic, Fairtrade and Rainforest Alliance beans from Ethiopia, Honduras, Sumatra and Peru, roasted in the UK. Freshly roasted beans (never more than 14 days old)

COFFEE SYRUPS (France): Vanilla and caramel syrups, made for us in France

CORONATION SAUCE (UK): Made to our own recipe and delivered to us chilled

CRANBERRY SAUCE (UK): Usually sourced from the USA and cooked for us in the UK

CRISPS (UK): Our potatoes come from different countries in Europe. We hand-cook them in small batches in the UK

CRISPY ONIONS (Holland): Grown in Holland, lightly coated and flash fried, delivered at room temperature

CROISSANTS – SWEET & SAVOURY (France & Belgium): Prepared using traditional French flour, snap frozen, delivered to us and baked in our shops throughout the day

CUCUMBER (UK & Europe): Sourced in the UK except when out of season

FRUIT CHUTNEY (UK): Our own fruit chutney recipe, prepared with mangos, apricots, apples and sultanas

FRUIT COMPOTE (UK): Fruit sourced from various countries (depending on seasonality and variety). Compote prepared for us in the UK

FRUIT SALADS (UK): Fruit sourced from various countries (depending on seasonality and variety), prepared for us in the UK, delivered chilled

GREVE (Sweden): Creamy, matured for 10 months, shipped to us chilled

HONEY (Mexico): Honey barrels brought to the UK by boat, refined and packed in the UK for us

HUMOUS (UK): Nice and chunky, prepared and blended in New Covent Garden Market in London to our own recipe

MEATBALLS (UK): Pork from Farm Assured-equivalent European farms, mixed and cooked for us in Cambridgeshire

MILK (UK): 100% organic, from dairy farms in and around Somerset, delivered chilled every day

MOZZARELLA (Italy): Completely Italian, completely authentic, brought to us by boat

MUFFINS (UK): Made to our own recipes on the south coast, baked and delivered to us every day

MUSTARD CRESS (UK): Delivered in little punnets, washed and cut straight into our sandwiches

MUSTARD MAYO (UK): Made to our own recipe using free-range eggs with tangy English-style mustard in Buckinghamshire

PORRIDGE (UK): Made to our own recipe, traditionally cooked, served hot in our shops with honey or fruit compote

PRET PICKLE (UK): Slow cooked (to make it syrupy) with balsamic vinegar, made for us in Staffordshire and delivered chilled

PRET YOGHURT DRESSING (UK): Yoghurt, with chillies, garlic and fenugreek, prepared and blended for us in New Covent Garden Market

PRETZELS (Germany): Made in the traditional home of pretzels, snap frozen and shipped to us, finished in our own ovens

PROSCIUTTO (Italy): Traditionally hung and cured, thinly sliced and shipped to us chilled

PURE PRET CANS (UK): Sparkling water, naturally sweetened with fruit juices, made for us to our own recipes in the North West

PURE PRET STILLS (UK): No sodium benzoate, no aspartame, zero fat, no artificial colours, made for us near the Yorkshire Dales

SMOOTHIES (UK): Strawberry and mango purées from around the world (depending on the season), blended and bottled for us in Kent

SOUP (UK): Handmade, no preservatives, organic stock, UK or European meat, made to our own recipes and delivered to our shops every morning

SOYA MILK (UK): Canadian soya beans, naturally sweetened with apple juice, made for us in the UK

SPINACH (UK): UK leaves during the summer months, leaves from southern Europe during the winter, washed and packed for us in the UK

STRAWBERRY JAM (UK): Smooth, delicious, completely organic, made for us in Somerset

STUFFING (UK): UK pork, sage and onion, prepared for us in Scotland

SUSHI (UK): Konbu powder, soy sauce and saki are from Japan; the rice is a special short grain rice from America; salmon trout is snap frozen in Chile; prawns are snap frozen in Vietnam; pickled ginger is from Thailand; vegetables from the UK and Europe

SWEET POTATO CRISPS (UK): Seasonally sourced from Europe (depending on crop and availability), hand-cooked in small batches in the UK

TORTILLAS (UK): Made with UK wheat

TUNA (Ghana): Pole and line caught in the Atlantic off the coast of West Africa, by-catch friendly, canned and shipped to the UK

TUNA MAYO (UK): Pole and line caught in the Maldives, by-catch friendly tuna, blended to our own recipe in Kent and delivered to us every morning

TURKEY (UK): 100% British breast meat, snap frozen - it's the only way we can get enough at Christmas time - no phosphate, not reformed, not pumped full of water, marinated, cooked and sliced for us in the UK
